Ingredients (for BB-CEC20):

  • 1-2/3 cups (400mL) water
  • 2 Tbsp. (26g) vegetable oil
  • 3 Tbsp. (60g) molasses
  • 2-1/3 cups (298g) bread flour
  • 1 cup (120g) whole wheat flour
  • 1 cup (120g) rye flour
  • 4 Tbsp. (32g) cornmeal
  • 1-1/2 tsp. (8.4g) salt
  • 2 tsp. (2g) instant coffee
  • 2 Tbsp. (10g) unsweetened cocoa
  • 5 Tbsp. (40g) vital wheat gluten
  • 2 tsp. (5.6g) active dry yeast

Ingredients (for BB-HAC10):

  • 7/8 cups (210mL) water
  • 1-1/2 Tbsp. (20g) vegetable oil
  • 1-1/2 Tbsp. (30g) molasses
  • 1-1/3 cups (170g) bread flour
  • 1/2 cup (60g) whole wheat flour
  • 3/4 cup (90g) rye flour
  • 2 Tbsp. (16g) cornmeal
  • 1/2 tsp. (2.8g) salt
  • 1 tsp. (1g) instant coffee
  • 1 Tbsp. (5g) unsweetened cocoa
  • 2 Tbsp. (16g) vital wheat gluten
  • 1 tsp. (2.8g) active dry yeast

Ingredients (for BB-PAC20):

  • 1-1/3 cups (320mL) water
  • 2 Tbsp. (26g) vegetable oil
  • 3 Tbsp. (60g) molasses
  • 2 cups (256g) bread flour
  • 1 cup (120g) whole wheat flour
  • 1 cup (120g) rye flour
  • 4 Tbsp. (32g) cornmeal
  • 2 tsp. (11.2g) salt
  • 2 tsp. (2g) instant coffee
  • 2 Tbsp. (10g) unsweetened cocoa
  • 3 Tbsp. (24g) vital wheat gluten
  • 2 tsp. (5.6g) active dry yeast

Attach kneading blade(s). Measure ingredients precisely and add to the baking pan in the order listed. Make sure that the yeast does not touch the liquid.

Place the baking pan into the Home Bakery, close the lid and plug the power cord into the outlet.

Select the REGULAR WHEAT setting for BB-PAC20, BASIC WHEAT setting for BB-CEC20 model and BASIC BREAD REGULAR setting for BB-HAC10 model. Press START.

When baking completes, turn off the unit by pressing and holding the START/RESET button for BB-CEC20/BB-HAC10 model and CANCEL button for BB-PAC20 model. Take out the baking pan using oven mitts and gently shake the loaf out onto a cooling rack.

Let bread cool and serve.
